Mozzarella Cheese Sticks

Ingredients: 


  • 12 (light) mozzarella string cheese (lower calorie)
  • 45g (3 tbsp) almond flour
  • 30g (2 tbsp) grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 46g (3 tbsp) liquid egg 

Seasoning notes:

The original batch were very bland.

Next time, try: 
1/2 tbsp Italian seasoning 
1/2 tsp garlic salt

  • 36 calories
  • 0.7g carbs
  • 3.9g protein 

The entire batch:

  • 434 calories
  • 8.1g carbs
  • 47.5g protein 

Note: for this recipe, I am using the Sargento String Cheese Light which are 45 calories per stick. This is the lowest calorie cheese I could find in store, your macros may differ.

Instructions:

  1. Place the liquid eggs in a separate bowl.
  2. Mix the almond flour, Parmesan cheese and seasonings in a separate bowl.
  3. Cut the string cheese in half. 
  4. Dip the string cheese in the liquid egg. Make sure it’s fully coated.
  5. Take it out of the egg and roll it around in the almond flour mix. 
  6. Dip it again in the liquid egg.
  7. Roll it around in the almond flour mix.
  8. Set aside on a plate. 
  9. Repeat this process for the remaining sticks.
  10. Place in freezer for at least 2 hours or overnight. This will help the mozzarella stay in tact while cooking.
  11. Preheat air fryer and spray with nonstick cooking oil.
  12. When ready, place in air fryer at 400 degrees for 6 minutes. Check them around the 4 minute-mark to see if they’re done or as crispy as you would like. If they are overcooked, the cheese will explode so be sure to keep an eye on them!
